My brothers were coming from out of state so I ordered a 3 pound 40 day dry aged rib roast in advance. They charged me $40 a pound ($120 total) and sold me a 30 day (those extra 10 days make a big difference in flavor and justify a higher price per pound) aged roast that had blue mold on it. I have aged hundreds of pounds of beef roasts at home and I’ve never had blue mold . Their cabinet is either not holding temperature or they are mishandling the meat, or both. As we were looking forward to prime rib, I asked them for a 3 pound rib roast that was not aged.
