The texture of the dish is rich, soft yet crispy, and a mix of salty and sweet. 🍣 Low-Temperature Slow-Cooked Salmon Most salmon in France is polarizing; either it's smoked and too salty, or when pan-fried, it's just right, but if cooked well-done, it's too tough. Their low-temperature slow-cooking method avoids both issues, resulting in tender and not overly salty salmon. Main Courses 🐟 Sea Bream The fish is prepared in the most traditional way—pan-fried. The fish itself is not too salty and a bit plain. As the saying goes, "Salted fish, light meat." The side dishes are the highlight, from top to bottom: super crispy and tender sea asparagus, refreshing lemon pulp, and satisfying cauliflower puree.
