Welcome to Bosq – the one and only Michelin-starred restaurant nestled in the heart of downtown Aspen. As a foodie and frequent skier visiting Colorado, I had high hopes for this place. 😁Unfortunately, while the experience was pleasant, the flavors fell a bit flat – especially when compared to other acclaimed dining spots around the world. Here’s a detailed look at what we tried. 🍽️ Course 1: Appetizers Deer Bark Masa Éclair: An interesting concept with local ingredients, but the texture was slightly dry and the gamey taste wasn’t balanced enough.❤️ Duck Liver Mousse: Smooth and rich, but lacked the depth and seasoning I expected. Served with decent toasted bread.💕 Bison Tartare: Fresh and minimally handled, though it needed more acidity or crunch to elevate the dish. A classic with a Rocky Mountain twist. 🍽️ Course 2: Mains Colorado Potatoes: Beautifully presented and locally sourced. Perfectly cooked but under-seasoned. Scallop Umami: The scallop was seared well, and the umami broth was pleasant, but it didn’t leave a lasting impression.❤️ Dry Aged Duck Breast: Tender and cooked medium-rare as requested. The skin could have been crispier, and the sauce was a bit too subtle. 🍽️ Course 3: Desserts Melipona: A honey-based dessert with nice aroma, but overly sweet for my taste.👌 La Trufa Chocolat: Decadent and rich, a safe choice for chocolate lovers. Black Currant Jelly Forest Candy & Bolivian Chocolate: The most interesting of the three – earthy and tart, with a nice contrast in textures. 📍 Location: 312 S Mill St, Aspen, CO 81611, United States 📌 Tip: Easily accessible in downtown Aspen. Great for a special occasion, but manage your expectations. 💬 Overall: Bosq offers a refined atmosphere and professional service. The use of local Colorado ingredients is commendable, and the plating is artistic. However, the flavors didn’t quite meet the Michelin standard – some dishes felt underwhelming and safe.
