I asked for fewer noodles this time (learned from my last visit when the bowl was overstuffed!), which left more room for toppings and made the bowl easier to enjoy. 🍖 The Meat lineup Generous and well-prepared: Beef shank → tender and thinly sliced Pork slices → soft, not tough Black pepper sausage → firm and flavorful Pork knuckle → crispy, chewy, and my personal favorite 😍 ⚠️ Note: No blood cake in this version, for those who expect it. 🥗 Toppings & Extras They don’t hold back on the bean sprouts or purple cabbage — fresh and plentiful ✅. The chili sauce leaned more toward savory and bean-forward than spicy — adds saltiness but not heat. 💰 Price Large Bowl: $15.99 Fair for the portion, especially given the protein variety. ⭐ Rating: 3.5/5 A solid bowl, but not my personal favorite. I came back after a meh first visit (my broth had a weird soapy taste — and I wasn’t the only one who noticed, based on comments). This time was definitely better — no off flavors — but the overall profile just didn’t win me over. Funny enough, if Phở Tây Đô had been my first Bún Bò Huế, I might not have fallen in love with this noodle soup to begin with 😅 🧡 Final Thoughts If you like a shrimp-forward, bean-scented broth with loads of meat and texture — this could be your spot.
