Tucked away in a deep alley around the Italian Parliament, this affordable Michelin-recommended spot doesn't require a reservation or waiting in line during non-peak hours. Rigatoni di Gragnano alla Amatriciana: A rich blend of tomato and pork bacon aromas, the sauce is thick and the large pieces of bacon are unforgettable. Roman Tripe with Pecorino Cheese and Mint: The tripe has no strange taste, it's very tender and has a delicate texture. The sauce is delicious, and when paired with the tripe's texture and crispy bread, it's absolutely scrumptious. The pre-meal bread served here is also one of the best I've ever had.
