Without a doubt, this is the one! Stumbled upon this pasta gem by chance, and they say all the pasta is handmade! After leaving the Vatican, I went straight here. ⛲️ The restaurant is tucked away in a small alley near the Trevi Fountain. It’s even smaller than I expected, so it’s best to make a reservation ahead of time. I was lucky to get a seat since I was dining alone. 🎵 Though the place is small, they were playing all my favorite songs. The kitchen has an open door, so you can watch the chefs prepare the pasta—so cool! 🍝 Of course, I had to order pasta! I picked the first item on the pasta page: wide pasta with white meat sauce and rosemary. Since everything is made fresh, you’ll need to wait a little, but the wait is totally worth it! The moment I took a bite, I knew this was my pasta of a lifetime! The cheesy aroma enhanced the richness of the white sauce, and there was plenty of minced beef. The wide handmade noodles were drenched in sauce, and the rosemary’s fragrance lingered in my mouth—perfection! 💯 🥙 Beef Tartare The raw beef was topped with a layer of white truffle cream (it’s rich but not greasy), and there was a subtle hint of lime in the cream. Initially, I thought it might be some strange “fancy dish,” but I was blown away!
