The uni was so sweet and delicate, I even added extra to my final A5 wagyu hand roll—a luxurious, melt-in-your-mouth combo! 🤤 Star of the night: Kobako Crab 🦀💫 A winter exclusive, meticulously hand-picked and served with roe and meat piled neatly over rice—an intense, savory-sweet ocean burst in every bite. Nigiri Highlights: 🐟 Kue (Longtooth grouper): Firm, bouncy, elegantly chewy. 🦐 Amaebi (Sweet shrimp): Sticky, tender, delicately sweet. 🦑 Ika (Squid): Crisp, clean cuts with perfect texture. 🐠 Nodoguro (Blackthroat seaperch): Lightly torched, rich, buttery, and smooth. 🍣 Toro: Evenly marbled, silky, and flawless. The harumaki (spring roll) with yuzu gosho was a bit oily for my taste—the only less memorable dish. Chef Yuki was warm and knowledgeable, sharing origins and stories behind each course.
