Soban has been open for about three months, and while most guests come for their famous galbijjim (braised short ribs), I recently tried their 은대구조림 (braised cod) — and it instantly shot to #1 in my book! 🏆 🌟 Why It’s a Winner Braised cod can easily become mushy or dry if overcooked, but here the fish stays tender, flaky, and moist, simmered in a perfectly balanced sweet-spicy soy-based sauce that’s rich but not overwhelming. Each bite is savory, slightly sweet, and gently spicy — absolutely addictive! 🫶🏻 🍖 The Classic Galbijjim Also outstanding — the beef short ribs are fall-off-the-bone tender and deeply infused with savory-sweet flavors. It’s clear why this dish is the crowd favorite. 👨🍳 The Chef’s Pedigree After chatting with the owner, I learned the head chef previously worked at Chungdam and later Chungkiwa — two longtime staples of Atlanta’s Korean dining scene.
