Boston | The Eaves is open again!

Vincenzo, the owner of Cicada, has brought his second establishment, The Eaves, back with a new menu! It’s already the third time it’s opened, haha 😂 🍜 The menu is super concise, focusing on the theme of Vin’s noodle bar, specializing in Huế-style Vietnamese rice noodles, also known as Bún Bò Huế. 🐂 I ordered the beef noodles with beef tongue. The portion is massive; one bowl is seriously too much for one person 🥲. At first, I thought adding beef tongue for seven 🗡️ was a bit pricey, but then I found that half the bowl was filled with thick slices of beef tongue 🧎‍♀️. Huế-style beef noodles have thicker rice noodles compared to pho, more like Yunnan rice noodles! And the broth is a perfect blend of sweet, sour, fresh, and spicy, not as sweet as pho. Vin says to enjoy the original flavor, so he doesn’t allow adjusting the spiciness. 🥃 I ordered the Song Cai whiskey.
