Too tired to type much at the airport, but compared to whatever I ate in Dallas, Wa Shin truly saved my mood ✨. I got to try all kinds of seasonal and off-season ingredients I wanted: snow crab (likely 🦀), monkfish liver, horse mackerel, sea bream, white shrimp, and more – everything you’d expect. Both the quality and seasoning left me with nothing to criticize, everything was just right 👌. The chef’s handling of the fish was precise, and the pairing with house-made sauces showed both tradition and creativity. Each piece of sushi was served at the perfect temperature, with the rice subtly vinegared to complement the toppings 🍚➡️🐟. The pacing of the meal was thoughtful, and the ambiance – quiet, minimalist, yet warm – made the experience even more immersive. Service was attentive but never intrusive.
