Boulder's Hidden Gem of Vietnamese Cuisine
šChez Thuy Restaurant: Behind the dark green curtain, the complex aroma of lemongrass and fish sauce drifts through the air. š„£Bamboo hats hang on the walls, and an old-fashioned fan cuts lazy arcs through the high-ceilinged space. Each table is equipped with a small stove for serving freshly prepared pho. On our first visit, the fried spring rolls recommended by the server were truly impressive. š„¬The rice paper, filled with wood ear mushrooms and minced pork, was fried to a perfect crisp. š„ Dipped in fish sauce and lifted to the mouth, the initial crunch gave way to a burst of hot, savory juice. The classic Vietnamese pho showcased even greater skill: the beef bone broth, amber in color, was balanced by the freshness of basil and lime, which tempered the intensity of lemongrass. Thinly sliced raw beef curled delicately in the hot broth. šWhatās especially remarkable are the Cambodian-inspired options on the menu. #BoulderEats #VietnameseCuisine #Pho
