Finally got to try the long-awaited Swift & Sons! Ranked No. 71 in the world—quality definitely lives up to the hype! 🥯 Beef Tartare – Rich in fat, dotted with mustard seeds, smooth with diced onion and capers for extra aroma—savory and appetizing. 🦀 Crab Cake – Totally changed my impression! Packed with crab meat 🦀💖, barely any filler, just a hint of flour to bind. Served with mayo and celery—fresh, sweet, and refreshing. 🦞 Lobster Bisque – Vibrant orange and thick enough to coat the spoon. Infused with tarragon’s subtle sweetness—unbelievably flavorful 😘. Though the crème fraîche in the middle was a bit too much; mixing it all made it slightly heavy. 🥩 Porterhouse Steak – Breathtaking when it arrived. Perfect Maillard reaction created a dark, crispy crust, with a evenly pink and juicy interior. Slicing through released warm juices that pooled on the plate. The filet side was tender like woven silk, melting with buttery richness—like chewing a juicy candy. The strip side was more marbled, with chewy tendons bursting with caramelized, savory fat. Paired with foie gras—decadently rich and utterly blissful. The oxtail sauce tasted like sweet Shanghai-style braised oxtail—intensely savory. Wrapping beef in it doubled the texture and joy. 🥔 Baked Potato – Not your average side! Mashed with butter and cheese, stuffed back into the potato skin and baked. The starch softened by cream, cheese melting layer by layer—creamy, smooth, and not heavy. 🍮 Espresso Brûlée – Nice texture with a thin caramel crust. Expected strong coffee flavor in the custard, but it was closer to vanilla—a bit on the sweet side. 🍞 The complimentary biscuit was fluffy and soft. Service was excellent—attentive with water refills and always smiling.
