DMV Japanese Food – Kyojin 🍣✨

Tried this Georgetown Japanese spot that’s been highly recommended on Xiaohongshu – and it’s still relatively new! Visited tonight to check it out. Taste & Ingredients: 8.5/10 Value for Money: 7.8/10 Some posts call it the “best sushi in DC” – I think that’s a bit of a stretch 🙈. Compared to Ogawa or Omakase at Barracks Row, it still lacks some depth and soul. As mentioned in Apple TV’s Omnivore recently, the best sushi should have a kind of spiritual unity between the fish and the chef 🧠🎣. Kyojin isn’t quite there yet as the top sushi in DMV. Dishes we tried (server’s recommendations): • Signature A5 Wagyu Bun – $15 The sauce was great, but the bun was a bit stiff. The beef was tender and flavorful – a nice appetizer! 🥩🍔 • Monster Quad – $55 Lives up to its name! Scallops, Toro, A5 Wagyu, Salmon Belly – each nigiri topped with uni and caviar. Every bite is a flavor bomb 💥🍣. The uni had a slight fishy note, but the scallop and Wagyu combinations were the strongest. • Spicy Toro with Uni Roll – $25 The uni is from Hokkaido – sweet and generous portions. Fresh and delicious – the best dish of the night! 🌊❤️ • Volcano Roll – $13 Lots of crab meat, crispy texture with sweet eel sauce – truly tasty! 🦀🔥 If I lived in Georgetown, I’d come back often for their hand rolls and specialty rolls, plus maybe one or two luxury nigiri. But if you see sushi as a serious art – where rice shouldn’t fall apart, wasabi should be freshly grated – Kyojin may not be your top pick. Kyojin’s approach is stacking premium ingredients: Otoro + Uni + Caviar + A5 Wagyu… It’s the opposite of the philosophy in The Bear Season 2: “Chef, you want to subtract.” 🧑🍳➖ 💰 Per person: ~$130 (including tax & tip, no drinks) #DMVFood #DMVEats #WashingtonDC #GeorgetownUniversity #GeorgetownEats #DMVSushi #DCSushi #JapaneseCuisine #SushiReview #FoodieDC #GTownEats #PremiumSushi #UniLover #WagyuTime #FoodCritic
