Japango: A Sushi Spot in a Boulder Alley

☀️The three of us followed our friend's directions and arrived at this small shop adorned with a blue-dyed noren curtain—our destination for the day. ☀️Pushing open the door felt like an instant teleportation to Kyoto's Pontocho district—only eight cypress wood counter seats, 🌈with the master chef blowtorching wagyu beef, the air filled with the aroma of vinegared rice and sansho pepper. The atmosphere was very cozy. 🌈Sitting here and savoring delicious sushi was an exceptional Japanese dining experience. The chef's fingertip precision when shaping the rice was remarkable. 🔥I particularly recommend the daily air-shipped striped jack, paired with freshly grated wasabi and light soy sauce—the moment the fish melted on the tongue was stunning. 🔥The grilled kale unexpectedly stood out as a dark horse, with yuzu pepper sauce making the cabbage surprisingly satisfying, almost like eating meat. #Japango #JapaneseCuisine #Sushi #Boulder
