LA's Japanese Dining Peak โ Shin Sushi ๐ฃโจ
Having lived in LA for eight years and tried plenty of Japanese spots, I can say Shin Sushi's chef truly focuses on the essence of sushi โ no flashy gimmicks, just pure, delicious craftsmanship. Every fishโs texture and flavor are thoughtfully paired โ he has seven or eight different soy sauces on his counter alone! The fish is seasonal โ first visit the uni was from Mexico (a bit of a letdown), second visit it was Hokkaido uni ๐ Iโm very sensitive to fishiness, but everything here is exceptionally fresh. The chef introduces each piece in detail, and chatting with him is a delight. His father runs a sushi shop of the same name in Tokyo, and he previously worked at Asanebo before opening his own place in 2018 โ earning a Michelin star the following year. His senior colleague runs Kaneyoshi in DTLA. $130 omakase โ outstanding quality for the price.
