Marseille’s La Villa Madie 🌟🌟🌟
🏖️The latest three-star restaurant in Marseille, I managed to squeeze in a lunch here due to time constraints. The restaurant has a beautiful setting with an amazing view; dining while looking at the Mediterranean with the sea breeze is quite comfortable. The surprise was that the cuisine here turned out to be my favorite among the three three-star restaurants in Marseille. Some dishes were a bit too creamy, which could be a bit heavy on a hot day. 🌟Favorites included: • Smoked Sardine, jelly of kombucha, potato emulsion, shaved dried bonito • Red mullet, sea urchin and tarragon emulsion • Carabineros prawn, ice cream from the head, mousse from the shell, oil from the whole prawn drizzled over, local red fruit • Veal sweetbread, artichoke leave emulsion, veal jus, caper and onion. 🍽️The red prawn and veal sweetbread dishes were particularly outstanding. The red prawn was the second-best I’ve had after a barbecue place on this trip. The veal sweetbread was not fried but had a non-pulpy texture, which was excellent.
