Not totally traditional, but so good — and no risk of sugar coating scraping up the roof of your mouth 😂 🌶️ Sizzling Stone Pot Kidney Slices Super flavorful and totally rice-worthy! Thin, tender kidney slices with a numbing-spicy Sichuan peppercorn kick. The broth is so tasty — perfect poured over rice. 🥔 Di San Xian (Three Earthly Delights) Eggplant, potato, and pepper — all deep-fried and coated in thick savory sauce. Not my personal favorite, but a classic Northeastern dish worth trying if you’re into hearty flavors! 🥬 Water Spinach with Fermented Tofu Unexpectedly amazing — a veggie dish that outshone the meat for me! The fermented tofu adds just the right amount of umami — not too strong, just perfect. 🖤 Stinky Tofu Very similar to Changsha’s famous “Black Classic” style. Not overly pungent — fluffy inside and juicy with every bite.
