Ristorante Saltimbocca, a Roman flavor restaurant near Piazza Navona, serves the best braised oxtail I've ever had in Rome! The coda alla vaccinara (oxtail) is braised to perfection, so tender that it falls off the bone with just a flick of a fork. The tomato and vegetable sauce is incredibly rich and fragrant, covering the meat completely. I highly recommend asking the waiter for bread to soak up the remaining sauce after finishing the oxtail! The first time I went, the waiter offered it to us proactively, saying we could use bread to clean our platesāit was that fragrant! So delicious that even if there's a better version out there, it's hard to imagine how much better it could beāthis dish is divine! Saltimbocca, a classic Roman dish, is made with ham-wrapped veal cutlet served with a white wine sauce. Veal can easily be tough if not prepared well, but here it's tender and juicy. Trippa, Roman-style braised tripe, has a different flavor from Florentine tripe. The tripe is crispy and tender with no strange taste. The portion is generous, making it suitable for those who love offal or for sharing. The seafood pasta is beautifully presented, with the pasta served in the shape of a swan made of foil, but the taste is average, mainly because the pasta is too hard, the kind of al dente pasta that some people love. For pasta, I would relatively recommend pesto or gricia.
