If you know, you know~(Don't @ me—it's my birthday month, go easy pls 😉) Came once back in 2023, mostly remembered for the "clam soup without clams" 🍲 Then, on a random day in 2024, ran into a flushed Chef Keiji at Nakaji! That chance encounter sparked an obsession… Later, thanks to LTD, I tried the "life-changing taco I now crave weekly" 🌮 Haven’t looked at another omakase in Seattle since (Vancouver doesn’t count!). ✨ On Keiji: As long as he doesn’t get too creative with the appetizers, his sushi is Seattle’s best! ☝️ Gotta respect the innovation, though I couldn’t hide my reaction to the raw sea cucumber… But his silver-skinned fish? Absolutely unreal. Shoutout to LTD’s saba, kohada, iwashi 💙 A bold, evolving style of sushi—each piece bursts with unpretentious character.
