While casually scrolling, I came across a post mentioning Spinnaker Chocolate as a Seattle local treasure โ and after living here for years, Iโd never heard of it! ๐ง Turns out, itโs a small-batch, artisanal brand without mass production or widespread sales โ only available in select cafรฉs and local markets. Their new Bean-to-Bar flagship store (factory + shop) offers factory tours ๐ญ๐จ๐ณ, so I brought my parents for a visit โ super interesting! You can see photos explaining the whole process from cacao harvesting, fermenting, and drying, along with live demonstrations of grinding, separating beans, turning them into rich chocolate paste, and cooling them into bars! ๐ฑโก๏ธ๐ซ All flavors in the shop are available for sampling โ they specialize in dark chocolate with 70% cocoa or higher, with beans from different origins showcasing unique flavor notes like floral, fruity, or nutty. ๐๐บ My family and I all agreed: ๐ฅ Belize & Uganda were our favorites ๐ฅ Tanzania came in close second They also have three seasonal 58% dark chocolate options โ not our preference, but perfect for those who prefer milder dark chocolate! Higher concentrations like 85%, 90%, and 100% arenโt displayed โ just ask the staff to try or buy them! My personal favorite: 68% dark chocolate with coffee โ a light, fragrant coffee infusion! โ๏ธโค๏ธ We also bought a can of Cocoa Tea out of curiosity ๐ต โ smells wonderfully chocolatey but tastes lighter.
