You Get It — The First Dish Made Me Finish Two Bowls of Rice!

Fourth installment of my Seattle food explorations — A Fujianese bravely ventures into Hunan cuisine! 🏮🌶️ After asking around, it seems Seattle’s Hunan scene is dominated by two spots: Shaoshan Chong and Chili Master. But Shaoshan Chong uses way too much MSG (I was so thirsty afterward!), while Chili Master… well, let’s just say my carb-free night was completely ruined — in the best way 😂🍚 📍 Location: 13433 NE 20th St Suite A, Bellevue, WA 98005 🏮 Vibe & Setting Tucked inside a Bellevue plaza with decent parking (though you might wait ~10 mins during peak hours). Inside, it’s spacious and bright with classic Chinese red accents — but without that stuffy “old-school Chinese restaurant” feeling. 🥢 What We Ordered 1️⃣ Smacked Eggplant with Chili & Century Egg HIGHLY RECOMMEND!! So incredibly fragrant 🤤 Maybe I was just starving, but this dish alone made me devour almost two bowls of rice! Whoever thought to mash charred tiger peppers, eggplant, and century egg together is a genius. 2️⃣ Braised Triple Beef Delight (Tripes & Brisket) A powerful combo of beef tripe, omasum, and brisket — like a numbing-spicy dry pot version of offal stew. Not too spicy, but quite salty — light-eaters be warned. 3️⃣ Jiangxi-Style Stir-Fried Rice Noodles My friend came specifically for this — she said it’s way better than Shaoshan Chong’s version. Wok hei is strong here, and so is the heat 🌶️🔥 — best shared! 4️⃣ Grilled Fish Two fish options — we paid +$15 for fresh tilapia (worth it!). You can customize spice and numbing levels — we went with garlic flavor, mild spice & mild numbing (barely felt any heat). Comes with 2 free meat add-ons — highly recommend the braised intestine! The fish is fried first, so the skin is crispy, but the meat doesn’t soak up flavor deeply — it’s all about the sauce. 5️⃣ Stir-Fried Pea Shoots Fresh, clean, and soothing — but why are pea shoots so expensive in the U.S.? 😭 Always the priciest green! 6️⃣ Homemade Blueberry Cake Brought by a friend — perfect for cooling the palate! The restaurant kindly provided plates, forks, and a cake knife. 💡 Tips 🌶️ Flavor warning: Not super spicy, but quite salty — you can ask for less salt. I drank tons of water! 🚗 Parking: Gets busy after 6:30 PM — come early. We arrived around 6:20 PM on a Friday and didn’t wait. 👨🍳 Service: Staff are busy — be prepared to flag them down a couple times.
