Upon entering I was surprised to see mullets everywhere. I rarely go outside so it was quite disconcerting.
Overall the experience was undermined by the waitress spending 50 years talking to some attractive men (they didn't have mullets) at the bar. I tried sending telepathic messages but my mullet antenna (I sport more of a mulette than a mullet) was not sufficient enough to overcome the noise of people singing along to 'It's a Long Way to the Top' 2 seconds behind the song. Eventually she looked behind her into the 'bistro' area and served me.
The redeeming feature of the Hibernian is Wal's (pronounced Wall, not Well) fried chicken. It was supreme, rarely do I encounter such great food. The consistency of the fried chicken is without a doubt the one weirdest (in a good way) experiences of my life. How you can cook a chicken to have the consistency of cold butter yet still maintain the texture of chicken is beyond me. It was as soft as the bun but not soggy. Firm yet supple; Supple yet firm. Supirm? Firmple?
After my friend and I finished our fried chicken burgers we debated on ordering a second fried chicken burger. It wasn't that the meal size was small, it was fulfilling, but we were not left filled. The curse of eating good food. We decided that the staff had conspired against us, they had perfectly engineered the meal's quality and meal size to encourage a second purchase. We overcame the temptation and left satisfied that we had defeated the whispering fried chicken demons.
Overall, not bad. Its a stock standard hotel so I would go again if I got sick of...

I was the first of our group to order. 45 minutes later, everyone had their meal, except myself. I went to the young lady whom I ordered from, & enquired as to when I would get my order. She looked behind herself, & there was my order, on the bench. I returned to our table, received the bowl of Thai Beef Salad, tried some of the beef.... COLD !! So, I took it to the till area, where you order, & told the young lady, I can't eat this, it's cold, just give me a refund.... this was all said amicably. She arrived at the table, with $30:00 odd dollars in cash.. Now, funny thing is.... I'd never been charged ! We spent around $400 on meals, some paid before we left, some had paid as they ordered, & some had ordered off the waitress, but not get paid ( I was one ) As we left, I went to the till, gave the money back, remarked, I wasn't exactly happy with the whole process, but, accepted they'd stuffed-up. Got no apology, no thank you for my honesty in returning the mistaken refund, & I was told later, the lady standing next to the young lady, was either a manager, or one of the owners ?? Read moreWe popped into for lunch while we we're waiting to check in to the motel next door before heading to an exhibition. We ordered a bowl of chips. A big bowl arrived. Every staff member we encountered were extremely friendly and up for a chat which was great and U don't get very often In hospitality theses days. We had already booked in for dinner at the bistro before travelling to Bendigo because of its location for us. We returned for dinner. We ordered the wals schnitzel and chips and salad. Both me and my husband said we've never had such incredible chip's. Fluffy inside and crunchy on the outside yummy 😋😋. I don't think they can be beaten. The salad dressing was great. And the portions were huge and extremely filling. Prices r comparable to pub food. If we're In. Bendigo we will definitely be back and have told family and friends too. Please do yourself a favour...
