Ivresse offers a set 7 course menu, with optional cheese plate, that changes according the seasonal supplies. While we quite enjoyed the dinner we felt a tad underwhelmed by the menu as some dishes could have used a bit more contrast and punch, being it in flavor or structure/mouthfeel. Quality products, prepared to perfection in the open kitchen that grants the clients a good view on what's happening. Winner of the night was the Scallop and turnip in cidre and browned butter sauce that had everything you need in a dish; savory, sweetness, texture and acidity. Perfection! The desserts were a bit of a letdown and need some more study imo but hey, maybe that's just me. Wine pairing focused on small domain vin nature wineries which can be surprising, in good way and bad way. There's an optional non-alcoholic pairing with homemade juices. Deep and wide wine menu with a good selection of artisanal beers. Very friendly staff and service. Overall we had a very good experience with just some minor remarks.

We opted for the half alcoholic and non-alcoholic drink pairing (+ €24 pp) . The portions were fashionably small, and the main courses were only satisfactory. Unfortunately, the juice pairings were quite bitter and we found they didn't complement the food well. The wine was acceptable. The highlight was the exceptional cheesecake. Service was adequate; the staff were kind but somewhat lack of personal touch. The modern, industrial atmosphere was clean, though the temperature inside was a bit cold. Ultimately, the €80 per person cost felt disproportionate to the overall experience, leaving us hesitant to recommend it.

8/10 Very good tasting menu. The fish starter was excellent. The mushroom dish also very good. Maybe the least impressive was the trout (ingredients were great, but the combination was just ok). The cote de veau was a tad salty but very nice. The service was helpful and professional. It was nice to sit by the kitchen and watch the magic happen.

Habituée aux plats délicieux du Dillens, il me tardait de tenter le Bistrot Ivresse. Le menu, assez limité, regorge d'idées innovantes mais l'exécution est loin d'être à la hauteur. Les saveurs ne sont pas au rendez-vous et les plats sous-assaisonnés. Nous avons testé les moules au chorizo en entrée, accompagnée de la burrata aux pêches. Et la déception a fait que nous nous sommes arrêtés là sans commander d’autres plats. Le chorizo, rose clair et insipide, n’avait pas de goût et n’apportait rien aux moules. La burrata n’avait rien d’exceptionnel et les pêches, qui auraient pu apporter une saveur sucrée et acidulée au fromage, manquaient également de goût. Les plats étaient malheureusement fades, la cuisine semble suivre des concepts de recettes sans aucune idée de la manière d'exécuter le goût. Le vin conseillé était trop acide et pas assez frais pour le coup. Le personnel, bien que très aimable, est peu réactif. On ne vous amène pas de pain à table si vous n’en demandez pas. Les moules sont servies sans cuillère, alors que tout le monde sait que le bouillon se déguste aussi, et pas à la fourchette.
