Chinese Restaurants in US serve Better Beijing Duck'
Bianyifeng's Beijing ducks have thick layers of fat under the skin that compromises the crispiness. An authentic Beijing duck should be slowly roasted so the oil drips away leaving a nice thin crisp skin for wrapping with pancakes. The soup of duck bones, which should be made with what is left of our duck after the carving, showed up as a bowl of whitish MSG broth with nothing (no meat, no bones, no vegetables added as should be) added. It had to have been scoped from a common pot for there wasn’t even time to get our duck into the kitchen and the soup was served.
I couldn’t leave Beijing so dissatisfied so we want another attempt the next night. Our hired driver drove us to one (around Dongshiman about 5-10 minutes walk from the subway station to the airport express line) ,where the locals go. This restaurant made an authentic (no visible layer of fat under the skin), provided plenty of pancakes, and charged 25% less for a duck. They also had a mixed salad which acidity balanced the duck very well. We also enjoyed the desserts there.
