Unexpected good! I rarely finish the soup of the whole ramen But this one is really good The crab favor, the egg, ramen texture (I chose hard) and pork, all the parts are perfectly fine. Just seaweed, no surprise. I will definitely come back to this shop again.

crab soup ramen taste delicious, love the thick pork char siu, japanese soft boiled egg need more flavor fried chicken juicy and big portion but waited way too long for the dishes to be served (near an hour), sorry for the long queue under the sun outside

得知屯門人氣西餐廳在餐廳旁邊的舖位新開日式拉麵和食店，所以在試業的第二天便來試一試。

JEP by Involtini 主廚之前已試過兩次快閃在餐廳試賣拉麵，我都有去過，兩次都很不錯，今次再吃第三次，他的拉麵是每一次都有比上一次進步，很欣賞主廚有不斷想進步的心思。

這次叫了兩款拉麵以及一款甜食。

▶️ 濃醬油蟹湯拉麵 $98 這次讓我很有驚喜的是拉麵的質地有改變，比以前更加彈牙吸湯，即使我已拍了一陣影片相片，拉麵仍然非常彈牙。醬油蟹湯有蟹肉的鮮味，很清爽，很不錯。

▶️ 干貝蟹白湯拉麵 $108 這款干貝蟹白湯拉麵在快閃活動已出現過，水準依然保持得很好，干貝蟹白湯非常鮮味。兩款拉麵都配搭日式叉燒和醬油糖心蛋，日式叉燒表面微微帶有燒烤味道，內裏非常軟滑，糖心蛋非常流心入味。

▶️ 宇治金時刨冰 $79 這裏的刨冰是傳統的日式刨冰，刨冰是帶有咬口的顆粒感，這次叫了宇治金時味道，這裏用上非常濃郁的日本抹茶粉，再配上超濃郁抹茶雪糕。配料方面有紅豆、抹茶蕨餅、白玉、芝士奶蓋。抹茶蕨餅非常Q彈，紅豆甜度不會過甜配搭抹茶雪糕剛剛好。唯一小缺點是吃到最尾只剩下冰塊後味道變得比較淡，如果可以多一點抹茶粉或是多一點紅豆會更加好。

在香港小店很難生存的環境下，Jack 主廚仍然在不斷追夢嘗試更多不同的嘗試，真的很值得欣賞。希望大家也一直支持香港的小店。
