If you haven’t heard of Tarte Tatin, it is actually a true institution of French patisserie. And that’s good that Pain Chaud offers this French delicacy. I know that most customers will go to Pain Chaud for their much more photogenic Pistachio Choux. But from one gourmet to another, please give their Tarte Tatin a try.
But why should you? It will change your mind on traditional apple pies. Tarte Tatin is a unique patisserie because of the way it is prepared. Instead of adding the apples on top of the pastry dough and let the pie bake in the oven as we usually do with a traditional appel pie, you start by caramelizing the apples in a hot skillet (that later will go in the oven) with sugar, salt, and butter.
Once the apples cooked, they are covered with a layer of pie dough and bakedbaked in the oven for 40 minutes. You see what’s going on here? The dough pie will develop a nice crust and the apples be further cooked, trapped between the skillet and the dough. That’s how the salty caramel will drip into and flavor the apples. Once cooked, the skillet is covered with an upside down serving plate, and the content of the skillet flipped in the plate. Et voilà, the Tartin Tatin is ready!
Legend has it that tarte Tatin was accidentally created in the 1880s at a hotel, held by two sisters named Caroline and Stéphanie Tatin, 200 km south of Paris. One day, Stéphanie was preparing a traditional apple pie and because she was overworked on that day, she left the apples cooking in butter and sugar for too long. To hide her mess, she decided to cover the overcooked apples with the dough and baked the whole in the oven. The hotel guests who tasted the misconceived apple pie on that day truly enjoyed it so the sisters decided to make it one of their hotel’s signature dish. The Tarte Tatin remained on the menu of Hotel Tatin under a different name until the owner of Maxim’s who visited the hotel, stole the receipt and put it on the menu of his own restaurant under the name Tarte Tatin to pay tribute to the clumsy sister.

The cafe was rather big but quiet with not many customers. I walked in and was impressed by the variety of pastries I took some time walking from beginning to the end to decide what I wanted but there were so many I wanted to try. Ended up only allowing myself to get only 3 and I got the top recommended item the pistachio puff. The staff recommended me the almond croissant and I wanted to try the lemon tart. The lemon tart was not available on display and I asked they told me it would be out soon and asked me to wait for 5 minutes but I ended up waiting for 15 minutes. The customer service of the staff could be improved they don't look friendly and I asked them about the tart after 10 minutes they just walked off. I didn't dine in and I brought back to eat. First I had the pistachio puff and I thought it was pretty good though I would have loved for the flavour to be stronger. The lemon tart and the almond croissant I left it in the fridge and had it the next day it was still okay. Lemon tart was zesty and I loved it. The almond croissant was also pretty good loaded with fillings. Overall the impression for the pastries seemed to be of pretty high quality. Then I realized before throwing away the plastic bag when I looked at the receipt and they only charged me for 2 items instead of 3. Perhaps in a rush to give me the tart they didn't include it in the bill and I didn't check also as my taxi arrived and was waiting outside.
