We stayed here last week and I would like to leave a review as I think the management should know that it is really not as great as it used to be. Firstly the positives, it is a beautiful setting and most of the other clients were very chic. The first two courses were excellent but the third course described as an apricot cake had nothing cake like to it and was like an artificial buttercream decoration which neither of us ate. Because of their formula system and its pricing you are very much encouraged to order three courses but if the pudding is not very good the savings are not there. It was really too sugary and neither of us ate it. My husband ordered the chocolate mousse, luckily, so we just shared that but again it was more sugary than chocolatey. I then ordered a cafe machiato and they arrived with a latte machiato which is a completely different type of coffee and I explained that I could not drink milk in the afternoon as it makes me ill. Even though I was speaking in French the waitress looked confused and did not seem to know the difference. So I said of could I please have a Noisette instead. She brought me instead the latte machiato decanted into an espresso cup. I did not want to cause a fuss and I needed coffee so I did drink it but as a result I was really sick and bloated for several hours. I think it was very wrong of them to assume that just because I am anglo-saxon I would not know the difference and that I would automatically want milk mixed into my coffee. In fact this assumption is practically racist. We have a house in Burgundy and I have lived in Paris several times so I do know what a noisette looks like and simply did not want to make a fuss which is why I did not go back to them. A restaurant attached to a five star hotel in France should know what a noisette coffee looks like (black with a nut sized milk foam on top). We stayed at the hotel afterwards and the breakfast was ok but overall it was disappointing as we have eaten there before and had a much better experience. The hotel itself is nice and the spa is excellent so I will probably return for the spa but do not think we will return to the bistro. I do hope the management reads this and trains up their staff a bit more. Particularly in knowing their different coffees. I did order a matcha latte the next morning and it was ok although it still made me a bit sick so I assume it was made with cows milk rather than the more normal almond milk that a matcha latte is made of. However I did not ask which type of milk they used so that is my fault. Most hotels would normally ask if you want cow, almond or soy but I do appreciate that it is in the middle of the countryside...... (even though I am able to buy almond milk easily in Dijon for our guests). The hotel itself is very pretty with lovely sculptures by Paul Day and we appreciated the free charging for electric cars...

Our main server didn't speak much English, but she was warm, kind and attentive. The sommelier was more talkative and together, they gave us a perfect experience. Bravo!
The food is immaculate. Although they aren't the cheapest options on the (affordable) menu, do give the shared dishes a try. The fish 'cake' topped with cheese on top of lemony risotto and lobster jus was so rich and delicious! The 'Ile Flottante' made with Madagascar vanilla and a variety of candied nuts was the best dessert we had tasted in the entire region.
This was rounded out by a solid wine list with options for every budget. A tome of wine knowledge with lots of great references.

J'adore l'ambiance maison de campagne, c'est chaleureux, sa rappelle de beaux souvenirs d'enfance et tout est vraiment bin fini avec le comfort moderne. Globalement très bon menu du midi en semaine, juste déçu par le dessert qui vient d'être mis à la carte, la mousse au chocolat. C'est écrit "mousse 80%" et la serveuse m'annonce donc une mousse forte de caractère. Rien qu'à la couleur et à la consistence de la mousse, je suis vraiment étonné. La mousse est claire, texture pas assez aérienne. C'est beaucoup trop sucré et ça manque vraiment du goût puissant et légèrement amer du chocolat noir "80%". De plus, il y a des espèces de petites billes industrielles de chocolat au-dessus, je ne comprend vraiment pas pourquoi mettre ça? Ça rajoute encore plus de sucre et ça n'apporte rien. Les noisettes sont bonnes par ailleurs. Sinon, l'entrée avec les œufs en meurette est un sans faute, parfaitement cuit, champignons ultra goutu, texture avec le lard qui croustille et la sauce. J'en profite piur saucer, le pain est dailleurs un délice. On sent bien le levain naturel, la croute est épaisse mais pas trop et la mis est souple et aérée. Le meilleur c'est le plat sans aucun doute. La viande de porc est incroyable. La cuisson est parfaite, la fine croûte de caramelisation à la cuisson en atteste. Le coeur est fondant, presque rose.
