Don't put your expectation as high as the one in Singaraja, even though they used the same name. First, I talk about taste, Siobak is all about the sauce. Their sauce is not really tasty and thick, but fortunately still has a good taste, not bad. Second, the condiments, you still got a good amount of condiments but not really generous amount of meat, liver, intestine like the one in Singaraja, I think.
Third, overall I think the main problem is the price. For me is expensive compared to the original one, is IDR 40.000 now (August 2021), and they still over charge for anything. Fourth, the place, not really good ambience for me. So, for the conclusion. I think is still good Siobak in town, but expensive. This is my first time. The warung is humble and small. I asked the uncle who sell Siobak and he said the price is IDR 35.000 per portion. If you add rice, that's additional IDR 6.000.
The seller also asked which sauce I want and I choose both Singaraja and Sweet sauce.
Both sauces are brown and thick. Singaraja sauce is savoury, while I prefer the sweet one.
If i compared with sekba (Jakarta dish) i thinks it's a bit similar. We can also choose if we want pork fat, pork ear, pork meat, pork guts and crispy chicken. The acar is delicious .
