We stopped at Eyal’s for a sabich, and it was great. He recommended what to get inside: tomatoes, onions and pickles. It was warm, gooey and bright, with the crunch of the veggies giving it some texture. He puts a secret spice blend which he would not divulge that gave a savory finish which was divine. He let us try a piece of falafel too and it was the best we had in Israel. The outside crust was delicate and fine, perfectly golden, unlike the burnt armor on some other falafel balls.
