Der Hubenbauer in Brixen kann auf eine langwährende Tradition zurückblicken. So gehen die Grundmauern dieses stattlichen Bauernhofes auf einen Wehrturm zurück. Es waren mehr praktische und finanzielle Gründe, die dazu führten, dass der Bauernhof einfach auf den alte Bestand drauf gesetzt wurde. Demnach wundert es nicht, dass das Geschoss unter den Wohnräumen als Reifekeller für den Speck diente und sich ansonsten dort viel Platz fand, nicht mehr Benötigtes zu lagern. So darf man in vielerlei Hinsicht die Zeit ab 2010 auf dem Hubenbauer Hof als revolutionär beschreiben. Der Hauptdrive zu den vielen Veränderung war der Idee geschuldet, ein eigenes Bier zu brauen. Man entschied sich ganz bewusst dagegen, das bayerische Reinheitsgebot zu befolgen. So wundert es nicht, dass die mittlerweile erlangte Sortenvielfalt Überraschungen bereit hält, die man in dieser Region, dem Eisacktal, so nicht vermuten würde. Dies allein wäre schon Grund genug, dem Hubenbauerhof einen Besuch abzustatten. Ein weiterer wäre, die mittlerweile entrümpelten Räumlichkeiten im Erdgeschoss zu besuchen. Das rustikale Mauerwerk bietet einen äußerst ansprechenden Rahmen für die Törggelenstube, die schönen Tische und Stühle tragen weiter zu dem guten Gesamteindruck bei. Das hier vieles gemäß der Südtiroler Tradition entstammt, lässt dann zuweilen das Telefon nicht mehr still stehen. So raten wir, insbesondere zu touristischen Hochzeiten, Ihre gewünschten Plätze sehr zeitig zu reservieren. Im Sommer sitzt man bei gutem Wetter im schönen Garten und das es hier ein sehr gutes, selbst gemachtes Eis gibt, hat sich auch schon herumgesprochen! ..... The Hubenbauer at Brixen can look back on a long tradition. The foundation walls of this stately farmhouse, for example, date back to a fortified tower. It was more for practical and financial reasons that the farm was simply put on top of the old stock. It is therefore not surprising that the storey below the living quarters served as a cellar for maturing the bacon and that there was plenty of room to store things that were no longer needed. So in many respects the time from 2010 on at Hubenbauer Hof can be described as revolutionary. The main drive to the many changes was due to the idea of brewing our own beer. A conscious decision was made not to follow the Bavarian Purity Law. So it is not surprising that the variety of varieties that has now been achieved holds surprises that one would not expect in this region, the Eisack Valley. This alone would be reason enough to visit the Hubenbauerhof. Another reason would be to visit the now cleared out rooms on the ground floor. The rustic brickwork provides an extremely attractive setting for the Törggelenstube, and the beautiful tables and chairs further contribute to the good overall impression. The fact that a lot of things here originate according to South Tyrolean tradition does not leave the telephone standing still at times. We therefore advise you to reserve your desired seats very early, especially at tourist weddings. In summer, when the weather is good, you can sit in the beautiful garden and word has got around that there is a very good, home-made ice cream here! The beer selection was wide and offered many different, well crafted options. I wish the smokey IPA was on tap to try with the flight, that way I would have purchased more than 1 to-go (it was delicious and unlike so many other beers out there right now).
