This was perfection. The best fine dining meal we have ever had. We went a la carte - to mix up vegetarian, meat and fish options. Each dish was mind blowingly good. Personal highlights - their versions of: gazpacho, tomato risotto, tartar and pork knuckle. We also loved their pre-bill dessert (petit four but more like petit three). Honestly though, I couldn’t fault any dish - from the welcome to the end. What was probably most incredible is the drink pairing. They don’t have a cocktail menu, you put your trust in their lead drink maker (one of the owners) and she creates the most wonderful pairings with very unique and delicious ingredients (both cocktails and mocktails, which draw upon ingredients in each dish you are served). They source local liquors and move away from the stock standard, preferring small batch producers who use minimal adds. We had no idea what was coming and were a bit nervous but just trust them to do their thing because it is beautiful and your tastebuds will be blown away. Do not miss your opportunity to go here if staying in the region - especially Sestri Levante. On the service - it was good without imposing - explanations of what we were eating were short which we loved - what are we eating and what’s in it - no faff about how it was inspired or made, straight to the point (the best kind of service short of giving you explanation cards instead of talking!). Finally, we also loved that you look into the kitchen - cooking is an art that as a guest of a restaurant you don’t often get to witness in full action. This place deserves more than one Michelin.
