This was perfection. The best fine dining meal we have ever had. We went a la carte - to mix up vegetarian, meat and fish options. Each dish was mind blowingly good. Personal highlights - their versions of: gazpacho, tomato risotto, tartar and pork knuckle. We also loved their pre-bill dessert (petit four but more like petit three). Honestly though, I couldn’t fault any dish - from the welcome to the end. What was probably most incredible is the drink pairing. They don’t have a cocktail menu, you put your trust in their lead drink maker (one of the owners) and she creates the most wonderful pairings with very unique and delicious ingredients (both cocktails and mocktails, which draw upon ingredients in each dish you are served). They source local liquors and move away from the stock standard, preferring small batch producers who use minimal adds. We had no idea what was coming and were a bit nervous but just trust them to do their thing because it is beautiful and your tastebuds will be blown away. Do not miss your opportunity to go here if staying in the region - especially Sestri Levante. On the service - it was good without imposing - explanations of what we were eating were short which we loved - what are we eating and what’s in it - no faff about how it was inspired or made, straight to the point (the best kind of service short of giving you explanation cards instead of talking!). Finally, we also loved that you look into the kitchen - cooking is an art that as a guest of a restaurant you don’t often get to witness in full action. This place deserves more than one Michelin. I piatti, vere e proprie opere d’arte, si presentano con un’estetica impeccabile: cromatismi armoniosi, composizioni eleganti e un’attenzione ai dettagli che rivelava la passione e la competenza dello chef. I sapori sono bilanciati con maestria, con combinazioni sorprendenti che esaltano la qualità delle materie prime e l’abilità tecnica nella preparazione. Ogni boccone racconta una storia, un viaggio sensoriale che coinvolgeva gusto, olfatto e vista. La ricercatezza dei contrasti e la delicatezza delle consistenze hanno reso il percorso degustazione un’esperienza multisensoriale indimenticabile. A completare l’esperienza, un ottimo vino francese, perfetto nel valorizzare i sapori proposti. In conclusione, Impronta d’Acqua non è solo un ristorante, ma una vera e propria spa per il palato, capace di rigenerare i sensi attraverso un’esperienza gastronomica raffinata e coinvolgente.

Io e il mio compagno abbiamo optato per il menù a la carte. Siamo passati da un antipasto di gamberi rossi fresco e giocoso, a uno a base di sgombro più consistente e deciso. Come primo abbiamo scelto seta, triglie e fagioli e lo spaghettone. Il primo caratterizzato da un gusto affumicato, il secodono deciso e agrumato. Il piatto forte della serata è stato decisamente il dessert "tra il sacro e il profano". Volentieri avremmo fatto il bis e, seguendo solo la gola, anche il tris. Il tutto è stato contornato da un servizio impeccabile e per nulla invasivo. Sicuramente la serata ci ha lasciato un bellisismo ricordo, e con piacere torneremo in questo eccellente ristorante, quando faremo ancora visita alla bellissima Ligura.

Let's start with the unexpected bits; Lavagna is the opposite of glamorous, the location of the restaurant would be more appropriate for a shop selling towels and sunscreen, and the inside is warm as a garage, So obviously the team who set up this place is made of crazy people. But when it comes to the cuisine ; Oh My God, that was - by far - the best dinner I had in Italy (and I won't mention how many times I visited this country, because I stopped counting long ago). Creative cuisine + perfect service. The world needs more crazy...
