When you order a pizza at home from a big chain restaurant it’s often greasy gluttony and filling but not the flavour you were hoping for. This is the pizza you really wanted. The margherita pizza from songi di pizza is the best.

Low moisture mozzarella that melts properly and evenly, the right amount of sauce so that it isn’t wet and the cheese won’t slide around. The sauce isn’t sweet or too herbal, it tastes like fresh tomatoes. A thin base made from a high moisture dough cooked at high heat so that it’s crispy and airy but still has some chew. If you forget to ask for it to be cut, you can tear this pizza into slices no problem. The base won’t crumble and the topping won’t slide around. What little grease the cheese releases emulsifies with the tomato sauce and doesn’t make it soggy, the bottom stays dry and nicely leopard spotted. It’s a perfect pizza.
