RISTORANTE A CAVA — Restaurant in Rosolini

Wonderful Italian food. A hidden gem deep in the Sicilian countryside. The food is excellent and the surroundings are fantastic. Getting here you may feel a bit uneasy as you drive a narrow road down what seems to be a quarry and eventually end up at the bottom where what seems to be an old chapel is lit up by ominous spotlights. They open quite late so we did some exploration while waiting and as it was dark it took some courage for my kids to go close enough to the chapel. Their pizzas are something else, the crust is cooked to perfection to give just the right crisp without being blackened or burned. Recommended, but remember to bring cash. When we were there the phone lines were down so they could not process card payment, asking us to leave our credit card details so they could process it later. Iniziamo dal principio: 1 errore: avevamo il tavolo prenotato per le 22 e siamo arrivati in anticipo praticamente alle 21:30 eravamo già lì e piuttosto che farci sedere nel tavolo già libero hanno fatto accomodare un gruppo di 4 persone che non avevano nemmeno prenotato, ma solo perché si conoscevano.. 2 errore: dopo più di un ‘ ora finalmente ci sediamo e scegliamo una bottiglia di vino. La cameriera lo porta in tavola e ci chiede chi volesse assaggiarlo. Lo assaggio un mio amico sul tavolo e non lo vedo convinto così Lo assaggio anch’ io e non piace nemmeno a me cosi chiediamo l’ annata ed effettivamente non corrisponde a quanto scritto nel menù. La cameriera lo porta indietro e arriva un signore visibilmente agitato dicendo che il vino era in uno stato ottimale e quindi abbiamo sbagliato noi a sceglierlo visto che non ci era piaciuto. Premetto che Questa cosa non mi era mai successa, nemmeno nei ristoranti più squallidi in capo al Mondo.. ma proseguiamo con il 3 e madornale errore: arrivano le pizze e nella mia c’ è un errore, doveva essere senza prosciutto crudo. Il cameriere la riporta indietro e quindi aspetto. Dopo 2 minuti ritorna e dice: l’ abbiamo rifatta velocemente così mangia insieme agli altri. Mi sembrava strano xke in 2 minuti nn riesci a condire la una pizza e cucinarla .. così sposto la rucola che avevo rimesso sopra, per camuffare, e mi accorgo di alcuni pezzetti di prosciutto crudo sotto.Chiamo il cameriere gli chiedo di parlare con un responsabile per la gravità di ciò che era appena accaduto, ovviamente nn è mai arrivato nessuno e non riesco più nemmeno a riordinare un’ altra pizza.. ero l’ unica sul tavolo a non mangiare e nessuno si è preoccupato quanto meno a chiedere. La pizza poteva essere anche buona ma questo succede quando non sapete fare bene il vostro lavoro e non mostrate Professionalità. Questi errori così gravi, xke potevo anche essere allergica al crudo e voi lo avete tolto con le mani piuttosto che rifare una pizza. Ma nn vi vergognate ?? Ma questo è modo di lavorare ?? Questa è la professionalità che vi distingue?? Tutti a fare silenzio sull’ accaduto e nessuno che si fosse scusato. Shockingly good culinary experience... the food is so good that it left me speechless, the restaurant is decorated in a sleek minimalist style, the service could not be better. The way these people have been able to interpret and present the Sicilian culinary heritage is moving. A Cava could easily rank with two Michelin stars if they wanted to, but I suspect their mission is different as they want to make their food accessible to everybody. Their pizzas are also outstanding, their way to prepare and cook the dough makes them tastier and more digestible. Probably my best dinner in the last two years, I could not recommend this place more. A dinner at A Cava alone is worth a trip...
