L'Olandese Volante Trieste — Restaurant in Trieste

This is an uncomplicated and unpretentious restaurant that serves the best pizza I have tasted in Italy. Given that my wife and I have a house in Italy since 2017, that means something. My wife and I had pizzas- she had the Bocconcino and I had the Rustica. The tomato-sauce was very tasty, made from very aromatic tomatoes, I guess. All ingredients were of high quality. The restaurant servers many "special" pizzas and are more pragmatic than many Italian pizza-restaurants. We were looking for a restaurant near where we were staying and happened across "L'olandese Volante". We ate there twice (or rather we ordered to go), but everything tasted perfectly. The pizzas were perfect, thin crusted with plentiful toppings and a lovely flavour. The spaghetti carbonara are the best I have eaten in a long time (including in other restaurants in Italy), the Calzone is deliciously simple, yet surprisingly good and the Tiramisu was perfectly balanced. I can highly recommend. After multiple disappointing experiences on main square/pier and canal we have found this hiden gem right at the corner of our appartment. We went there for last 3 nights as group of 4 people for dinner and drinks. Simple and authentic experience, english speaking staff ready to fullfill all your wishes. We have ordered almost half of menu over those days, multiple courses with drinks, nothing to complain, even steaks or sliced beef just according to our order.
