I found the Organic Centre while hiking the Michinoku Coastal Trail. I wanted to learn to cook ramen, and chef made a special angler fish ramen (a very expensive fish if bought in the market, but actually caught it in the ocean). Chef picked fresh ingredients from the mountains and used his own fermented ingredients including miso and soy sauce that they age in 100 year old wooden barrels. The flavor is extraordinary. We did the set course - the highlights were the fresh bread, the sushi and sashimi, and variety of local vegetables. Chef Sato takes pride in cooking without additives or preservatives - and you can certainly taste the difference! The inn was comfortable with views of the coast.
