I had the privilege to sample your ramen at the 2024 Dai Tsukemen Haku Festival. I am writing a review here because I really loved the food that you served me. It was very innovative, and most importantly, wickedly delicious!
Essentially in one dish, there was soba and tsukemen. How impressive is that?! I liked the instructions you gave me on how to eat the noodles - it really added to the experience.
The soba on its own was delicious already. The seaweed broth beneath the soba gave it a new flavor!
Then by adding salt, it tasted very different. The sweetness of the noodles came out. That, I already found very impressive.
With the soup, it really became tsukemen. The noodles and soup together had a very fine taste, and the duck meat was a great topping to go with the noodles.
Lastly, the tsukemen soup really became a different soup after adding the broth you recommended as the last step. This was personally my favourite step.
What an experience! I donât know how, but you essentially served me four dishes in one tray! I love how innovative the idea was, and how fine the food tasted.
