Fine dining experience with seasonal and locally harvested ingredients. This restaurant brings the farm to table experience to a whole new level. We had a reservation on their first working day of 2023 and were greeted with a warm welcome at their fireplace. Afterwards we were brought to our private table where we got explanation on the local herbs, vegetables, and vineyard they had. Each of the dishes reminded me of Japanese kaiseki style meals but were unmistakably prepared in a French way. The drink pairing (we had the non-alcoholic) were great and complemented the taste of the dishes. At the end of the course, we got to talk with the chef. The servers were also very friendly and professional.
Location wise it is a bit further away from the main locations like Kanazawa, but still well within accessible distance with public transport + walking or taxi. The chef even drove us back to the station due to the lack of taxis on a particular rainy day around the new year -- many thanks again for this! The attentive service elevated the whole experience. The course was full of well executed dishes that emphasize the vegetables raised in the grounds of the restaurant. The chef presented a unique combination of french techniques, farm to table vegetables, his Mexican upbringing, and a surprising Japanese sensibility. The vibe and attention to home grown ingredients reminds me of Blue Hill at Stone Barns, but, and I do not say this lightly, we liked this meal even more.
