I've been in Japan for almost a month and decided to come here on my last night. The owner is very friendly and helpful. It was great watching him skillfully prepare our food. The salt rice was some of the best rice I've ever eaten in my life. I got the Char siu men- the broth had a wonderful, complex flavor and the pork was fantastic. It was by far the highest quality ramen I had on my trip. I told the owner that he should move to America and open the best ramen restaurant in the country. Highly recommended! Do not miss out on this experience!

I love being able to watch how my food is being prepared. Unfortunately I ordered the ramen with lots of fried garlic during lunch time (my mistake) which was still really good. The texture of the ramen was perfect, the soup had a great texture, even though I would like it a bit thicker. The charsiu was amazing, therefore next time I will go for some charsiumen! The gyoza were a great addition and the next time I will definitely go for a set with fried rice - watching the owner making it made me really hungry! Will come again!

平日11:35 前客2名　後客10名ほど 刈谷駅から徒歩数分の好立地。数年ぶりに降りた刈谷駅。周辺はこんなにラーメン屋さん多かったんだと検索してみて驚いた。その中で熱い魂感じられる店名に引かれて初訪問。 ラーメンとチャーハンが主体のメニュー構成。ただラーメン種類が多く様々なアイデアが溢れてる。その中でレギュラーメニューとは別のPOPメニューになった一番推しの 台湾ラーメン（900円）モヤシ（100円）大盛り（100円）をオーダー。 食券機ではなくカウンターオーダー後会計。 店内とてもピカピカでキレイなオサレ内装。コンクリート調の壁紙に気持ちの良い間接照明、証明色もとても落ち着く。店主さんと女性アシスタントの2名オペ、着丼あっという間。後客さん見てても店主さんの手際の良さが素晴らしくて、調理スピードが心地良い。 炒めモヤシうめーーー！！！ 鉄鍋の熱と育ってる鉄鍋の味が染み渡ってる。家でモヤシ炒めつくってもこの味にはどう転んでもならない。 そこに大量の台湾ミンチがどーーーーん！！お、これは、キュイーーーんて辛い。唐辛子系かと思いきや痺れ、山椒が大量に練り込まれてるのか？この麻辣なアプローチは驚き、そして美味い。 スープは白濁のトンコツベース。マイルドさもありつつスッと切れ味良いトンコツ、モヤシ炒めやニラや台湾ミンチやラー油などど混じり合って、複雑ではない素直な深みが後を引く後を引く。後を引く後を引く…。 中細ちぢれ麺、デフォでも柔らかめ、風味もしっかりで味噌ラーメンで出遭う感覚の麺だ。そこに台湾ミンチを直接巻き込んでほおばる美味さよ、大盛りは1.5玉かな？中細ゆえに中々の啜り回数、食べてもおお？まだこんなにあるの？くらい嬉しいボリュームだった。 うーん美味しかった。後客さんが気づいたらホントに続々。あっという間に満席に近づいてきたので、チビチビやってたスープを諦め退出することに。後客さんのほとんどが、ラーメンオーダーするとサービスで100円安くなるチャーハンをオーダーしてた。このチャーハンも大火力の素早い鍋ふりであっという間に仕上がる。あーー間違いなくうまいやつだこれ。これから刈谷に来る機会もできそうだから、次回はチャーハンつけよ。ごちそうさまでした。

I love being able to watch how my food is being prepared. Unfortunately I ordered the ramen with lots of fried garlic during lunch time (my mistake) which was still really good. The texture of the ramen was perfect, the soup had a great texture, even though I would like it a bit thicker. The charsiu was amazing, therefore next time I will go for some charsiumen! The gyoza were a great addition and the next time I will definitely go for a set with fried rice - watching the owner making it made me really hungry! Will come again!
