Ultimo Niseko — Restaurant in Kutchan

Honestly, I was really looking forward to this as the reviews were stellar and being in Hokkaido let alone Japan you expect a certain quality of food but if you are at all passionate about the culinary arts I would not recommend this spot. The space was beautiful and the service was pretty great, I was just a bit disappointed given the price point relative to the quality of the food.

I’ll start with the fact that it is supposed to be an Italian inspired menu but was primarily Japanese first with the exception of the risotto dish.

The amuse and starter were fine but what really got me was the first course being yellowtail and my FAVORITE, Hokkaido Uni carpaccio. It lacked any salt, whether soy or otherwise and seemed to be very thoughtless in its execution despite a beautiful arrangement as I had found a small mouthful of scales in my last few bites, if anyone has had this happen to them you know how unpleasant this can be.

The pasta course (a risotto with Hokkaido snow crab) was something I was very much looking forward to, but as soon as the plate was put down you could see that the risotto was severely undercooked (the bright white grains of rice a dead giveaway).

Lastly the venison, although a good portion and tasted generally great was inconsistent in its delivery as my piece had what I assume (and hope) … was some type of prosciutto wrapped around it whereas my husbands did not (nor was it mentioned on the menu).

The dessert however, was pretty fantastic so I do have to mention that. The hojicha ice cream was a true standout on the dish.

There are other things I could say about the remaining courses but these were really the standouts. Don’t come here if you’re expecting a mostly italian inspired meal or a fair product for your $$ at that, there was way better spots in the...

ヒルトンニセコ滞在中に、いつもヒラフや俱知安へ行く途中で通りがかっていましたので、気になっていました。

ちょうどタイミングが合ったのでランチで訪問させて頂きましたが、どの料理もおいしく、パンや自家製バターまで最高でした。平日限定でパスタランチもされていますが、お腹に余裕があるようでしたら是非9種の前菜付きのセットをおススメします。どの前菜も丁寧に調理されており、ここでワインが飲めないことを心惜しく感じられました。

ちなみに、イタリアの本場ではカラスミにはマグロを使うという事をこちらのパスタから知りました👍

食後にドリンクを頂けますが、元々イタリアンのお店ですのでカプチーノ・カフェラテも用意していただけます。こちらはコーヒーも最高ですので、お好きな方は是非どうぞ。

次回のニセコ訪問時に行きたいお店がまた増えました。うれしい限りです😍💕
