One of the best meals I’ve had in a while. Since it was during the Sendai’s Tanabata Matsuri (one of Sendai’s largest festivals), we had to wait about 1.5 hours. 週末17時過ぎに初訪問 カウンター6席程度と4人がけテーブル2つ。 テーブルは予約で埋まっていて、18時前にはカウンター含め満席となりました。 満席となっても定食だけ食べて出る方も多いようなので、回転は良いと思われます。

お肉を扱う飲食店オーナーがオススメと言っていたお店だけに、本当に美味しかったです。

牛タンの厚み、風味、やわらかさ 人気有名チェーンの一般的な牛タンは、噛み切ろうとしても噛み切れないことも多く、そのまま1カットを口に入れちゃう感じの食べ方になっていましたが、こちらの牛タンは噛み切れるやわらかさ。 ちょっと価格高めの「芯タン」、「極み」の類の牛タンと比較してもやわらかい。 歯応え、歯切れの良さは、素材と料理人の技によるものなのでしょうか。

そして、熟成による風味と塩加減が程よかったです。チェーン店の牛タンはご飯が進むちょっと強めの塩気になっていますが、それよりは塩味が控えめで、牛タンの風味がより分かる感じでした。 その分？テールスープが塩辛かったのは、計算なのか？
