And I love Mexican cuisine.
I give Casa Mercedes hands down, 5 stars.
From the warmest most helpful & attentive front of house, Ricardo, to Chef Mayela's memorable dishes (the lightly battered cempasúchil entrada, marinated pasilla peppers surrounded by crispy queso, pollo with an effervescent pistachio mole, duck tacos, & pan de elote dessert), & having the honour to meet El Jefe Cardenas (their father) who explained the heritage of their restaurant/food - I am filled a deep sense of foodie joy, for the best all around Mexican meal I've had.
The inventive flavour combos mixed with local/regional ingredients, give such a playful twist to Mexican classics.

The mole dishes were outstanding and different than anything we have ever had before. We had the lengua pecan mole, chicken pistachio mole, and fish with chile mole. They were so flavorful, complex, and elegant while being homey and light at the same time. These are very special family recipes. Save room for dessert too! The owner is very nice and the service was awesome, the restaurant is on a hill so there's nice views and we got a chance to see a part of Guanajuato that we otherwise would have not seen. Read moreOne of our most memorable meals in Mexico, Casa Mercedes compares to the best restaurants in Mexico City and Oaxaca. They mostly serve refined traditional food along with some modern dishes. Everything was fantastic but the chicharrón de queso was especially incredible.
Reservations are made on WhatsApp but expect an answer before/after restaurant hours. The view over Guanajuato is gorgeous so ask for a table by the window if possible. Our only request would be to add some fans.
The most special part was speaking with the wonderful owner Señor Jesús, whose daughter is the head chef. He is an encyclopedia of knowledge about Mexican cooking and shared so many interesting stories about local gastronomy and his childhood.
