We decided to eat here when we visited my hometown Joco. This is a cute, nice restaurant located in one of the main busy roads in downtown. Because of that, be aware of the fumes of the big trucks, buses, and regular cars driving by, as well as the noise they do create. The staff is very nice but they take forever to bring your drinks and food. I ordered the carne asada plate, which only comes with a big salty piece of steak, a scoop of dry refried beans, and a scoop of guacamole. No tortillas are included whatsoever. La Vieja Canoa is one of those places that's just plain located in the wrong place. Set right next to Jocotepec's main thoroughfare, a couple of blocks from the main square, the restaurant is plagued by constant traffic noise.
This persistent noise affects the overall atmosphere considerably. And while the food is actually quite good, service is decidedly on the slow side. Prices are fire.

Knowing how to properly proof the dough is just as important. Having an oven that actually gets to the temp required to achieve the right balance of crisp and chew without going completely cracker crust is well... you know. A chef that will brush the crust with a bit of EVOO? HEAVEN! Take the drive to Joco. I promise...
