For a place so focused on trying to be Italian, it just doesn't quite hit the mark.
Pizzas:
Oven: The pizzas had delightful leopard spotting at the bottom, and the thin crust was crispy. However, they lacked proper heat on top.
Dough: I appreciate a dough with some chew, but these seemed overworked, making them a bit too chewy. The proofing was good, with nice airy pockets in the crust.
Base Sauce: The tomato base tasted like canned sauce, overly acidic and sweet with no nuanced flavor.
Toppings: Some worked better than others, but often, quality was sacrificed for quantity. The buffalo mozzarella on the trip to Italy was disappointing in both quality and quantity.
Finish: The major issue was how poorly the parmesan was added on top. Instead of a proper grater, a general household grater was used, resulting in annoying little sticks rather than a proper blanket of snow that melts.
Admosphere:
Seating: The green benches are quite upright and do nothing for ergonomics; avoid them if you can.
Music: was relazing but seemed unsure of what it was tring to do.
Service: It was busy for the amount of servers no doubt but, each had a maximum of 3 tables and even when we were the last table service was stil slow and faild to notice when we were asking for help.
If it were a typical pizza spot, I might have cared less, as the taste was still okay. However, it falls short of being authentically Italian despite its efforts. It feels more like the ownes does not really care for the restaurant, like they have miltiple and rather sees it as another avenue of income instead of a passion.
