This is the best Japanese ramen (or the Korean version of ramen) shop in Seoul. As a noodle enthusiast, whether instant or made from scratch, I could happily visit this place every day. The broth is vegetable-based, not derived from meat stock, delivering a rich umami flavor without a greasy or meaty aftertaste. Their chashu (braised pork belly, a common ramen topping) is flavorful and complements the broth wonderfully. They also offer a Korean version of spicy ramen for a change of pace. The restaurant features a multilingual kiosk with menus in English, Japanese, and Chinese, which I found very helpful. The open kitchen, visible to all, is impeccably clean. The restaurant, located off the main road, has windows all around, providing ample natural light. I have loved this little noodle gem since I first visited a couple of months after it opened. The menu has expanded with more variety, but their vegetable-based soup with Chashu (braised pork belly) still delivers that deep umami flavor with a beautiful blend of richness and balance.
One thing I really appreciate is that they have maintained their strong hygiene standards. Everything looked clean, and they were using food grade sanitizers. That level of detail is rare, even among hygiene conscious Koreans, and it is just one more reason to come back.

The owner is kind and I like the way he talks gently to his employees. They say the broth is vegetable based and I was surprised because it was delicious.
