I don't know where to start with writing this review, I booked a table for two based on the Michelin guide recommendation.
The restaurant is labeled as fusion cuisine, you can choose between 2 set menus, larger and smaller, as well as a la carte options. The dishes are average without any special story, and the order seems like the kitchen is making something that is good to them for some reason, I didn't quite understand why the menu setup is like that. The waiters are polite but don't seem very professional or experienced. The kitchen is open and visible from the dining area, you have 3 chefs and a dishwasher who occasionally appears with washed pans. The head chef is mostly at dinner with a computer, pretending to be working on something on the computer, the food is pre-prepared and mostly just finished before serving to guests. All in all, an average kitchen with average staff, but chaos ensues when a larger table arrives and orders a la carte since there's no chance they can agree on the same menu that is mandatory for the whole table. We left the restaurant and saw that a another 2 table of guests who arrived 30 minutes after us still hadn't received their first course, as there is no amuse-bouche. Of course, the food starts to arrive late for everyone since they have 2 chefs and one mastermind (suposed to be a head chef) for the computer, maybe it's the DJ. The music comes from poor sound quality and the tone isn't adjusted, all in all not such a good atmosphere. And all of this would be irrelevant if the owner hadn't just called me after I left a 3-star review on Fork, probably the one with the computer pretending to be the head chef, to ask me in a semi-rude tone why I rated the restaurant that way and that it offends him and he wants to discuss something with me. He then tells me that he looked me up on Google, found out which company I own, and tried to draw parallels between his job and mine. A very unpleasant situation, so here's my review for him to read in his free time while he's staring at the computer instead of cooking.
I have to add a response to the owner's response to my review. We did not come with a negative attitude at all, on the contrary, we were very kind to the staff, left a tip, thanked the waiters and you in the most normal way when you approached our table. I think the food you prepare does not deserve a higher rating than 3 stars, that's my choice, but what is terrible is that you called me on my private phone after the review to argue with me, and after my review on Google that I didn't even intend to leave but did because you harassed me on the phone, and now you are even lying in your response. I won't prolong it, a little advice, accept criticism instead of arguing because you make things worse. You had 3 stars on Fork and by calling me you got 2 on Google, and now after your response, I am reducing the rating to 1 star. Feel free to continue, I will ask my wife to rate...

We were pleasantly surprised when the evening started with complimentary chicken croquetas—crispy on the outside, deliciously creamy on the inside, setting the tone for the meal ahead.
Our group of three each chose something different from the menu. I opted for the white prawn tartar, which was incredibly fresh and delicately seasoned, followed by the seabass as my main dish. The fish was perfectly cooked, with a tender, flaky texture that was simply divine. My friends, who both had meat dishes, were equally impressed with the quality and preparation.
The main course arrived quickly, allowing us to enjoy our food at its peak. After our meal, we were treated to a delightful surprise—complimentary liquors that were a perfect ending to our dining experience. Each one was unique and expertly crafted, a true testament to the restaurant's attention to detail.
To top it all off, the chef personally came to our table after dinner. It was a thoughtful touch that made the evening even more memorable. He asked if we enjoyed our meal, and it was clear from our satisfied smiles that we did. Overall, it was a fantastic experience from start to finish, and we can't wait to return.

HIU stands for the combination of Spanish and Thai cuisine, which might sound a bit complex, but it definitely works! We had the tasting menu and from the start till the end all dishes were great. The slow cooked leek, seabass in its own emulsion and short rib with vanilla were from another level and showcase the enormous potential of the chef and his team. The interaction between the person dining and the kitchen makes it an extra special experience, they work in an open kitchen and the guest can watch everything they do. If the chef offers you a drink/chupito in the end please do choose the red pepper one, you won’t believe how great it is till you taste it.
The price for the menu was very decent, my advice is to go as soon as you can cause these guys will get a Michelin star withing the next 1.5 years. The only recommendation I have for the restaurant is to tell a bit more about the wine that is being served and please consider to offer a wine pairing (I know not a lot of restaurants offer this in Spain but it would take the experience to an ever...
