Having been a loyal patron of Nobu establishments around the globe for over a decade, I had high expectations for my visit to Nobu Ibiza, and in many ways, those expectations were met or even exceeded. The quality of the food was nothing short of extraordinary. Each dish was a testament to the culinary artistry that Nobu is renowned for. From the exquisitely fresh sushi to the perfectly seared black cod, every bite was a delight that showcased the meticulous attention to detail and exceptional ingredients.
The service, too, was exemplary for the most part. The waitstaff were attentive, friendly, and knowledgeable, ensuring that our dining experience was smooth and enjoyable. They were always ready with a smile and eager to make our meal as pleasant as possible.
However, despite these positives, our experience was significantly marred by the sommelier, Victor. His demeanor was exceedingly unpleasant and pedantic, starkly contrasting with the otherwise high standards of Nobu. Victor's arrogance was palpable from the moment we interacted with him. Instead of enhancing our meal with his wine expertise, he made the experience uncomfortable and frustrating.
The issue culminated when he attempted to charge us for a full bottle of wine, despite our clear order for wine by the glass. His confrontational attitude when we questioned this charge was unprofessional and disconcerting. This kind of behavior is not what I expect from any dining experience, let alone from Nobu, a brand synonymous with excellence.
Victor's conduct is a glaring blemish on an otherwise stellar dining experience. His behavior and attitude are far below the standards that Nobu strives to maintain and what loyal customers like myself have come to expect. The night started with a 40 minute wait for water- we ordered water, as well as the tasting menu with wine pairing. The first course arrived without the wine pairing. The second and third courses were out of order and with the incorrect wine pairing. Then two courses arrived at the same time. Full wine glasses piled up on the table instead of tasting portions. This moment was a full stop- the staff was running around like chickens without heads, the F&B manager was smiling and laughing schmoozing tables without a clue what was happening around him. After speaking with him we never saw him again but noticed he went off to berate the servers. The only saving grace was the bar manager acting as our waiter.
The food was unmemorable at best due to being severely tainted by the dismal experience, and for the exorbitant price paid we should have been comped or invited back again for them to redeem themselves. The management should be ashamed as they were the reason the meal was not presented as intended by the chef. Like with most restaurants in Ibiza, they assume everyone is tourist and they wont see you again so why bother. But as residents, we expect more and until this is remedied we will be advising everyone we know to avoid Nobu...

I didn't have a booking, so was sat at the bar looking at the kitchen. There weren't many smiles in the kitchen that evening so there wasn't so much to watch. I felt a bit lonely there on my own, with all the tables behind me.
The menu is the standard Nobu menu. I was looking through trying to find dishes that were warm that appealed to me as the seat was really cold. To be honest looking at all the sushi fish along the counter in front of me with the frosted fridge element in sight I wasn't really taken by it.
I ordered Tempura and Beef. The tempura came out almost immediately. Service was so quick. The zucchini was great but the eggplant wasn't. When I had finished that, the beef came out directly as well. I looked good but I wasn't crazy about that either.
Overall I was pretty indifferent about the experience. I can't say I would ever hurry back again. And I didn't eat there again for the rest of my holiday. Instead I walked down the other end of the beach to the tapas bars that were heaps more fun. I just guess I am not a Nobu girl. And I wondered why there was not something else in the hotel to eat for dinner...
