We found this restaurant via the michelin website while on holidays in Pals. With its beautiful location in the country side, we enjoyed a wonderful dinner outside enjoying the sunset. The starter with foie gras was superb and the recommended local wine perfect. The other starter with tuna and black pasta was a taste explosion and the recommended light red wine was an excellent combination. For the main course we choose two local rice dishes. The one with wild boar and foie gras was superb, the other dish with duck and lots of pickled vegetables had a great balance in taste and texture. The desserts gave the dinner a wonderful finale, with many different sweets and tastes in two complex desserts. Hicimos el menú degustación y, francamente, fue decepcionante. Vinimos porque aparecían en la Guía Michelin (que no suele fallar). Todo el mundo puede hacer bonito un plato, pero lo único que importa, realmente, es si la materia prima es buena o si está bien cocinado. O si ofrece conceptos innovadores, incluso, si me apuras.

Pues bien: menú degustación de 80€. Procedo a listar los platos y describir parte por parte.

ENTRANTES: -Sopa de tomate con pularda en escabeche -Tartar de Remolacha con queso -Huevo poché con polvo de setas y parmentier de patata.

Un bloque de pularda que no tiene ningún sentido flotando en una sopa de tomate (además de ser bastante insulso). El tartar de remolacha y el huevo quizás se salvan porque uno es fresco y combina bien (remolacha y queso), y el otro porque por muy sofisticado que parezca es muy difícil que un huevo poché con patata y polvillo de seta sepa mal.

PRINCIPALES: Aquí es donde está el problema. -Merluza de palangre con pimientos confitados. -Arroz de pulpo de roca con trompetas de la muerte. -Meloso de ternera.

La merluza era terrible. De nivel comedor de colegio. Nadie te está obligando a incluir pescado en un menú. No hay ninguna pistola apuntándote. Si no puedes garantizar pescado fresco o bien hecho, no obligues a la gente a pasar por un taco de merluza que quizás pagaste en pesetas. No diré que el arroz de pulpo fuera malo, pero no entra ni de lejos en los estándares de un menú degustación, donde como mínimo se supone que estás ofreciendo lo mejor de tu cocina (y que dios nos coja confesados si este es el nivel). El meloso de ternera, como la merluza, digno de un catering mediocre. Lo que pasa es que, en el caso de esta carne, es más complicado que resulte incomestible.

En resumen: un atraco a mano armada. Si no eres capaz de ofrecer un buen menú degustación, nadie te obliga a ofrecerlo. U ofrécelo a un precio muchísimo más bajo. Espero que los platos de carta sean más dignos de una...

Em temo que no l’he encertat amb el menú degustació. Es nomès correcte (nomès el bacallà, l’arròs i els postres destaquen) però costa 100€ amb beguda. Crec que hagués estat més adient anar a la carta i fer alguna mitjà ració d’entrant i dos arrossos (que son per cert de collita pròpia). El menu degustació és molt ambiciós sobre el paper però els entrants freds son nomès correctes, com l’ou, i l’espatlleta de conill amb vermut Espinaler no me va agradar. Pel preu que es paga jo esperava més. L’ambient i el servei son excel.lents, personal molt professional i atent, atenen en català, cosa que és noticiable al sector i en temporada alta. És molt d’agraïr que aceptin reserves per un sol comensal, i que el menú degustació es pugui demanar per a una persona (però a taula completa) i els arrossos siguin també racions individuals. Pàrquing gratuit. No m’agrada que demamin targeta de crèdit per garantir la reserva, em restaurant és força gran però un dissabte de juliol no estava plé. Tenia expectatives altíssimes per les crítiques i la ressenya de Michelin, i he pagat 100€ per dinar sense sortir entusiasmat com esperava. En Jordi, el chef, ha sortit a la sala a saludar els clients (un altre detall de categoria) i li he dit que tornaré per provar més arrossos, sense menú degustació. A veure si a la segona l’encerto.
