For dessert, I chose the roasted apple. While it may sound simple, it was a sophisticated and harmonious blend of flavours. Reservations are essential for this establishment. D’leria is undoubtedly a must-visit, standing out not only for the richness of its cuisine but also for the evident love and dedication infused into every detail. Congratulations to the team!

I’m very much in love with young creative hustlers, and that’s why I’m writing this review. I’ve stayed in Carill for only 1 night and I ate here twice. The young chefs are doing something truly special here, weaving their cultural heritage into a menu that's both authentic and inventive that often I could compare to pretty fancy dining experiences around the world. While they're on par with some of the greats in terms of culinary artistry, they're still refining their service rituals, compared to those restaurants you'll find in the Repsol or Michelin guides. Yet, make no mistake, these chefs are on the cusp of becoming household names. Treat yourself to this Gallego dining experience ASAP, before you have to book a reservation months in advance in the near future. :)

We got the tasting menu and although some dishes were more successful than the others for me, it was a pleasant experience. My favourite dish was the Roasted pepper and mussel bechamel followed by the Ensaladilla and the Monkfish Salpicón. Interesting flavour combinations and very fresh seafood. As a person not too keen on mackerels, I was pleasantly surprised by the not overwhelming taste of it. It was unfortunate that I had a fish bone on my last bite. The tuna plate was a bit too much for me, I did enjoy the taco one the most out of the 3 ways the tuna was served. Out of the desserts, one was a hit and the other one a miss. You can tell that the chef is passionate about his craft and some of the dishes were really good so I'd definitely go back if I am in the area.

Un restaurante con pretensiones de estrella michelín, cocina hiper minúscula cuya oferta consiste en platos fríos, previamente elaborados. Parece que realizar "platillos" con productos de pescado fresco de la zona, marinados, crudos o semicrudos, presentados de forma original, ya está todo hecho... Reservamos martes 15 de Agosto a las 15h, 3 de los 4 comensales llegamos a las 14:50h, con 10 minutos de antelación. Vi comentarios sobre la escasez de las raciones en The Fork, por lo que, mientras esperábamos a nuestro invitado, pedimos la carta, intercambiamos opiniones y consejos con la camarera la cantidad de los platos y que ordenar. Realizamos la comanda sin esperar a nuestro invitado, quien llegó a las 15:15h. Teniendo en cuenta las explicaciones ofrecidas por la camarera, atendiendo a nuestro buen apetito y ganas de disfrutar de esta experiencia, pedimos 2 entrantes distintos, se vendían por unidad, por lo que, ordenamos 4 unidades de cada uno, para que cada comensal pudiese degustar los dos entrantes. Entrantes fríos: 4 calamares alioli, la presentación es una especie de galleta navideña que elaboran, (plato frío con elaboración previa, imagino que con un proceso laborioso hasta conseguir este resultado... no esperes encontrarte el calamar en su tinta) 4 pastel de cabracho, un minúsculo tanco donde el cabracho se presenta en forma de espuma (plato frío con elaboración previa) Platos principales: Nuestra intención era pedir dos unidades de tres platos principales para compartir, pero, no disponían de cantidad suficiente de todos los platos por lo que tuvimos que adaptarnos a la disponibilidad de los mismos. 1 Caballa en escabeche, no disponían de dos unidades, sólo pudimos pedir una unidad (plato frío con elaboración previa) 1 Sashimi kebayaki (plato frío con elaboración previa) 2 longueirón beurre blanc, marcado en plancha con salsa tibia, a pesar de pedir dos raciones, nos tocaron 3 longueirones por persona en una mesa de 4 comensales. 2 bonito de burela con ajoblanco de anacardos, en cada ración, había 6 pequeñísimas porciones de bonito, la salsa estaba cortada y muy salada (bonito marcado en plancha) A pesar de indicarnos que cada plato podía compartirse entre dos personas sin problema, nuestra experiencia es contraria a la idea de su propietario y ratifica opiniones de otros usuarios. Nuestro invitado tuvo que salir precipitadamente para solucionar una urgencia en su domicilio, por lo que, solicitamos al restaurante que, por favor, en la medida de lo posible, parase la mesa durante 15 minutos y retrasase los dos únicos platos que se servían calientes, longueiron y bonito. Transcurrida media hora, retomaron el servicio de nuestra mesa y apartamos en un plato las porciones correspondientes para el comensal ausente por urgencia. El personal fue muy amable, hicieron lo posible para retener la comanda, pero obviamente, si la espera se alarga, tienen que seguir con el transcurso del servicio, no pusimos ninguna objeción, ni nos quejamos, bastante habían esperado ya. Aunque el ambiente es muy agradable, las raciones son escasas y el precio excesivo. Basándome en mi experiencia gastrómica, he visitado la mayoría de los restaurantes con estrella Michelín de Galicia, mi sugerencia es que se replanteen la oferta de la carta, bajo mi perspectiva, lo veo como un espacio chic, donde disfrutar de un aperitivo o "tapeo" creativo, original y diferente, acompañado de buena música, en lugar de un restaurante para comer. Abonamos 159.40€ por el menú descrito, al que debo añadir una botella de vino blanco, dos botellas de agua Solán de cabras, dos infusiones de te verde, un café con leche y un café solo, de tamaño ridículo, minúsculo más que un ristreto. Lamento que la crítica constructiva, que destaca tanto los aspectos positivos como los mejorables, no haya tenido una buena acogida por parte del propietario del local. El EGO es un mal compañero para todas las personas, en especial, para los emprendedores. Por fortuna, su respuesta habla de usted al 100% Gracias por mostrarse...
