This restaurant offers a fresh and new perspective on how to enjoy meat. As soon as you enter the restaurant you see a wide meat "vitrine" like in a butcher shop that intrigues you. Almost all of the tables were quite full but we did manage to get a table for five. In the middle of the table there was a glass cover that was not immediately visible to us what it was for. The whole experience, from the actual ordered raw meat that was presented to us, to the actual self-grilling and enjoying with some truly fine sauces is truly unique. I would say, as unique as Kevin's service. Always smiling, he explained the concept and is ready to answer all questions, even the more scientific ones, the ones to do with the biology of the proteases/lipases that play a great role in the meat aging process and end result. His service and guidance was truly of high standards without ever becoming too much. I believe that half of the restaurants success is its unique concept and the other half its amazing customer-centric approach. It also has a seemingly large wine variety, which I did not try as I concentrated on its truly tasty Valaissiene bier. All in all a great place to have dinner for anyone loving his meat. Is it all great? Well I am always truthful and cant hide possibly the only disadvantage of the whole experience. Food was good quality, Simon our host dealt with some minor hiccups very well and was very knowledgeable on the food and wine.
We ate quite early so the place was fairly empty hence only 4 stars for atmosphere.
One thing I'd say is that it would've been good to have the salad just before, or at the same time as you're served your meat so you have something to eat while you're cooking your food.

Unlimited sauces and potatoes were also lovely. The service was great, especially considering there weren't many staff on duty, but the gentleman still found time to be very welcoming even when very busy.
