We got some nice breads and pineapple cake from this famous bakery while recovering from indigestion issue in Taipei and Kaohsiung. Luckily their breads / buns are good and we especially like their Salzburg ham & cheese bread, floss & seaweed bun, and red-bean bun. The bakery shop is nicely decorated and quite spacious so you can shop with no anxiety like in other bakeries across Taiwan. The customer services from staff members are also good and they reasonably speak adequate English for tourists like us, but don't expect much conversation. However, you can ask about their products in English and get reasonable / understandable reply. Prices are still good value for the high quality, though they may feel high compared to other bakeries' offering in the area.

I am so impressed with this bakery! I love bread, and always thought that such a high quality bakery could only be found in Europe. This place is every bit as good as famous French bakeries! Unfortunately there is not really any seating, but maybe that’s just as well, because if there was, I would probably stay all day buying more and more bread snacks.

They propose delicious and refined bakeries, mixing asian products with well executed european bakery classics, be it the bread or puff pastry. Really accessible for people who don't understand mandarin as product's descriptions are translated in english. Furthermore, you can pick the bakeries yourself.

I am so impressed with this bakery! I love bread, and always thought that such a high quality bakery could only be found in Europe. This place is every bit as good as famous French bakeries! Unfortunately there is not really any seating, but maybe that’s just as well, because if there was, I would probably stay all day buying more and more bread snacks.

Pour ma dernière dégustation à Kaohsiung avant de prendre, le lendemain, le chemin du retour, j'ai choisi de me rendre à l'institutionnel "Wu Pao Chun", champion du monde de la boulangerie. J'avais effectivement beaucoup aimé ses pâtisseries dans l'établissement à Taipei qui avait ouvert récemment. Mais cette fois-ci, il s'agissait de l'établissement de Kaohsiung qui n'est autre que la maison mère. ☝ Je me disais que si je retrouvais au moins la même qualité qu'à Taipei, ce serait déjà magnifique. Je n'étais pas au bout de mes surprises...

Frustré d'avoir craqué sur la gourmandise à Taipei en prenant un croissant fourré plutôt qu'un croissant nature, cette fois-ci, je n'ai pas manqué à mon rituel parisien. En plus de cela, j'ai pris d'autres pâtisseries moins parisiennes briochées dont je ne saurais vous dire le nom exact et un « pudding allemand " y avait-il écrit mais qui ressemblait beaucoup à un flan parisien... Je l'ai testé également.

Très très bonne surprise pour le croissant qui est de la même qualité que ce que l'on retrouve de très correct à Paris et c'est une première ! Il aurait pu faire partie des meilleurs croissants de Paris ! J'irai même plus loin en vous disant qu'il est presque parfait et qu'il ne lui manque pas grand chose pour être le meilleur croissant du monde ! En effet, la texture du croissant est excellente, semblable à celle de la boulangerie "Utopie" mais en mieux... Le léger croustillant et la qualité de la fermentation, il n'y a absolument rien à redire là-dessus, on sent que le croissant a été travaillé au millimètre près, et il a fallu que j'aille jusqu'à Taiwan pour en trouver un de la sorte. 😮 La seule chose qu'il lui a manqué et qui fait toute la différence, c'est le goût et c'est vraiment dommage. Pas ce goût de beurre et manque de sucre, bien qu'il avait cette agréable fraîcheur et humidité de l'intérieur.

La briochette cuite à la façon muffin était très bonne, fourré à la crème comme il est de coutume dans les pâtisseries taiwanaises. La brioche était moelleuse et soufflée avec une pâte élastique clairement bien pétrie. J'aurais tellement aimé retrouver ce genre de brioche à Paris qui va me manquer. 😔 La deuxième briochette, moins soufflée mais davantage molle, avait une farce très spéciale mais je ne me rappelle plus ce que c'était exactement, peut-être du taro... C'était pas mal mais on va dire que j'ai plus aimé la pâte à brioche que la farce en elle-même. 😅

Enfin, le flan, ou pudding allemand, avait des caractéristiques qui pouvaient effectivement correspondre à un flan parisien, pas un flan parisien classique mais un flan maison qui se démarque des autres. Je n'en attendais pas beaucoup de ce flan et, encore une fois, j'ai été bluffé ! La plupart des flans parisiens sont loin derrière, la qualité est une dinguerie... La pâte à tarte sucrée est friable et limite moelleuse, l'appareil à flan est frais, onctueux, léger et bien sucré. Il n'est pas ferme mais sûrement pas liquide, il se tient bien, tout juste ce qu'il faut pour garder son onctuosité (certains regretteront l'absence de ce classique contraste entre la fermeté de l'extérieur et le crémeux de l'intérieur, mais pour moi, cela importe peu). Pas besoin d'un fort goût de vanille, il est tellement doux et goûteux que je m'en contente largement.

Au final, il a réussi l'exploit de m'impressionner encore plus que celui de Taipei qui était déjà à un haut niveau. Chef Wu Pao Chun n'a pas volé son prix. 👏 Je n'en dirais pas autant de certains boulangers...
